Ingredients:
45 ml Brookie’s Slow Gin
15 ml Aperol
30 cm Grapefruit Juice
5-10 ml Raspberry Syrup
10 ml Aquafaba (aka chickpea brine – a vegan alternative to egg whites!)
Garnish:
Lilly Pilly Leaf
Finger Lime Powder
Method:
Mix the ingredients in a cocktail shaker, strain and admire that aquafaba foam. Garnish carefully and enjoy, sweethearts.

45 ml Brookie’s Byron Dry Gin
30 ml Lemon Juice
15 ml Peach-Honey-Ginger Syrup*
*Blend 2 peaches with 3 tablespoons honey, a knob of ginger and a cup of water and finely strain.
Garnish:
Native Ginger Stick
Native Gingerleaf
A spritz of smokey single malt whisky, like Bowmore or Laphroaig
Method:
Stir and strain over a large block of ice. Spritz with that smokey whisky and put your feet up. It’s time to relax.

*Blend 4 figs with ½ cup of hot water and ½ cup of super. Finely strain.
Garnish:
Fig slice
Method:
Shake with ice, strain and garnish with a fig slice. This one is all about the flavour, no fuss.
